Instant Pot Taco Spaghetti
Here is a great recipe for the best Instant Pot Taco Spaghetti. Super simple ingredients makes a great dinner for the family in the pressure cooker.

Instant Pot Taco Spaghetti – The Weeknight Hero
This Instant Pot Taco Spaghetti is what happens when taco night and pasta night fall in love and move in together. It’s cheesy, zesty, and comes together in under 30 minutes—which is exactly what I need after we get home from my daughter’s dance practice, bags still in the hallway, and everyone already hovering in the kitchen asking when dinner’s ready. One pot, minimal cleanup, and a flavor explosion that makes everyone happy? Yes, please.

Ingredients and Why They Matter

Ground Beef or Turkey – The base of our dish and the main source of hearty, savory flavor.
Shredded Cheddar Cheese – Melts into the spaghetti for that rich, creamy, comfort food vibe.
Rotel – Adds a little tang, a little heat, and a lot of personality to the sauce.
Taco Seasoning – Brings all the smoky, spicy, and herby taco magic in one easy packet.
Spaghetti Noodles – The perfect pasta to soak up every bit of that taco-spiced sauce.
Chicken Broth – Infuses the noodles and sauce with a savory depth you just can’t get from water.

How to Make Instant Pot Taco Spaghetti
Turn your Instant Pot to Sauté and brown the ground beef or turkey until it’s fully cooked. Drain any grease so your dish stays nice and clean in flavor. Add the taco seasoning, Rotel, and chicken broth, then give everything a good stir so the flavors start mingling. Break the spaghetti noodles in half if you need to and gently press them into the liquid until they’re just covered. Seal the Instant Pot and pressure cook on HIGH for 8 minutes, then quick release. Open it up, stir in all that glorious shredded cheddar cheese, and watch it melt into creamy perfection. Serve hot and get ready for everyone to go back for seconds.

My Family’s Dance Night Dinner Tradition
We started making this recipe on Thursday nights when my daughter’s dance schedule had us running all over town. By the time we got home, everyone was too hungry to wait for a big, elaborate meal, and I was too tired to make one. This became our go-to because it’s fast, filling, and tastes like something you’d expect from a sit-down restaurant. Now, even on non-dance days, my kids ask for “dance pasta” and I’m happy to oblige.
FAQs About Instant Pot Taco Spaghetti
Absolutely! Monterey Jack, Pepper Jack, or a Mexican blend would be amazing.
It depends on your Rotel—use mild if you’re serving little ones or spice lovers can go for hot.
Yes, swap the meat for plant-based crumbles and use vegetable broth.
Fun Places to Serve This Recipe
This is a weeknight winner, but it’s also perfect for casual game nights, potlucks, or feeding a crowd after a kid’s sports practice. I’ve even served it as part of a “Taco Tuesday with a twist” dinner spread and it was the first dish gone.

What Makes My Taco Spaghetti Different
I think it’s the perfect balance of creamy, cheesy pasta with bold taco flavor, all made in one pot for the easiest cleanup. The Instant Pot locks in the flavor so every bite is rich and satisfying, and the Rotel adds just enough zip to make it exciting without overpowering. Plus, it’s one of those meals where the leftovers (if there are any) taste even better the next day.
It is a pasta dish that has all of the flavors of tacos, without the shell. It is a great way to get your taco fix, without all of the work. This recipe is made in the Instant Pot, so it is a quick and easy meal to make in a hurry!
