  • 1/2 yellow onion chopped into 1” pieces
  • 2 cups baby carrots, parboiled for faster cooking
  • 1 halved chicken
  • 2 tablespoons olive oil
  • 1 tablespoon thyme
  • 1 tablespoon paprika
  • 1 garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper

Instructions

  1. Add vegetables to a large mixing bowl. 
  2. Add 1 tablespoon of oil and half of the spices. Mix and fully coat.
