Easy Mexican Sunset Cocktail
This Classic Mexican Sunset Cocktail drink is super easy to make and great for any occasion! Simple ingredients makes this a yummy drink choice!
Tequila sunrise is made with tequila, orange juice, and grenadine syrup. Tequila sunset is made with tequila, lime juice, and triple sec. Both cocktails are refreshing and perfect for summertime sipping!
Important note
This is a built cocktail — meaning the ingredients go into the glass in a specific order rather than being mixed all at once. The order matters because it’s what creates the gradient that earns this drink its name.
Grenadine and amaretto go in first, directly into the glass. They’re the heaviest liquids and need to sit at the bottom. Ice goes in next. The tequila, peach schnapps, and pineapple juice get shaken together separately and poured slowly over the ice — slowly enough that the lighter mixture floats on top of the heavier ones rather than sinking through.
The result is a gradient from deep red at the base through amber to gold — the colors of a sunset, layered in a glass. Don’t stir it before you hand it to someone. The visual is half the drink.
What ingredients do you need for this cocktail?
2oz Tequila
2oz Amoretto
1oz Peach Schnapps
2oz Pineapple Juice
1 oz Grenadine
Ice Cubes
Lime Slices
Cherries
2 oz tequila: Blanco or silver tequila works best here — it’s lighter in color and flavor than reposado or añejo, which lets the pineapple and peach flavors come through clearly.
2 oz amaretto: An almond-flavored liqueur — Disaronno is the most widely available. This goes directly into the glass first, before the ice, because it’s denser than the shaker mixture and needs to sit at the bottom for the layered effect.
1 oz peach schnapps: Adds a fruity sweetness that bridges the amaretto and pineapple flavors. DeKuyper is widely available.
2 oz pineapple juice: Fresh or from a carton both work. This is the primary mixer for the shaker — it goes with the tequila and peach schnapps.
1 oz grenadine: This is the densest liquid in the glass and goes in first, before the amaretto. It settles at the very bottom and provides the deep red base of the gradient. Pomegranate-based grenadine (like Stirrings or homemade) has better flavor than the bright red corn-syrup versions, but either creates the visual effect.
Lime slices and cherries: Garnish. The cherry adds color contrast at the rim; the lime wedge adds a squeeze of citrus that brightens the drink slightly.
How To Make This Drink
Step 1: Pour the grenadine into the bottom of a tall glass. Then pour the amaretto on top of the grenadine. Don’t stir.
Step 2: Fill the glass with ice cubes.
Step 3: In a cocktail shaker, combine the tequila, peach schnapps, and pineapple juice with a few ice cubes.
Step 4: Shake well for 10-15 seconds until chilled.
Step 5: Hold a bar spoon just above the ice in the glass, or direct the pour onto an ice cube. Slowly pour the shaker mixture over the back of the spoon or ice cube so it lands gently on top of the amaretto and grenadine layers without sinking through. The gradient effect — red at the bottom, gold at the top — depends on this slow pour.
Step 6: Garnish with a lime slice and maraschino cherry. Serve immediately without stirring.
How the sunset layer works
The “sunset” in this cocktail is a visual effect created by liquid density. Grenadine is denser than amaretto, which is denser than the pineapple juice and tequila mixture — so when built correctly, the heavier liquids stay at the bottom and the lighter mixture floats on top, creating a gradient from deep red at the base through amber to pale gold at the rim.
Two things can ruin the gradient: adding the light mixture before the heavy ones, or pouring too fast. Build in the right order — grenadine and amaretto first directly into the glass, then ice, then pour the shaker mixture very slowly over an ice cube held above the glass with a bar spoon or just by directing the pour onto the cube itself. The ice cube slows and disperses the pour so it lands gently on top of the denser liquid rather than crashing through it.
Don’t stir before serving. The whole point is the visual — once it’s mixed, the gradient is gone. Drink it layered and stir as you go if you want.
FAQs

A Mexican Sunset is a built cocktail — meaning the ingredients go into the glass in a specific order to create a layered gradient effect rather than being shaken or stirred together. This version uses tequila, amaretto, peach schnapps, pineapple juice, and grenadine for a gradient from deep red at the base to gold at the top.
A Tequila Sunrise uses tequila, orange juice, and grenadine. This Mexican Sunset uses tequila, amaretto, peach schnapps, pineapple juice, and grenadine — a different flavor profile with the same gradient-building technique. The sunset version is fruitier and slightly sweeter from the amaretto and peach schnapps.
The slow pour over an ice cube preserves the gradient effect — the denser grenadine and amaretto stay at the bottom while the lighter pineapple and tequila mixture floats on top. Pouring too fast sends the lighter liquid crashing through the heavier ones and the layers blend together. Take your time with the pour and don’t stir before serving.
Yes — carton or canned pineapple juice both work. Fresh-squeezed pineapple juice has more brightness and less sweetness if you want to reduce the overall sweetness of the drink.
