Every summer there’s at least one occasion where I need to bring something that looks like I tried harder than I did. You know the ones — the block party, the end-of-year school celebration, the cookout where you said yes before you thought it through.

This fruit pizza is my answer to all of those moments.

It’s a homemade sugar cookie crust — soft, slightly chewy, just sweet enough — spread with a thick layer of cream cheese frosting and topped with whatever fruit looks good at the store that week. Strawberries, kiwi, mandarin oranges, blueberries. You arrange it in whatever pattern feels right and suddenly you have something that looks like you spent your whole morning on it when the actual active time is about 40 minutes.

My kids love helping with the fruit arrangement, which is a bonus for when you need to keep someone occupied and feel like you’re doing something together. Everyone picks their section. There’s usually a negotiation about who gets the strawberry slice on the piece they want. It’s a whole thing.

Make it the day before if you’re bringing it somewhere — it actually tastes better after a night in the fridge once the frosting and crust have had time to settle together.

  • 1 and 1/4 cups confectioners’ sugar
  • 1 teaspoon pure vanilla extract
  • 3 cups assorted favorite fruit

How do you make this easy fruit pizza?

Making the crust: 

  1. Whisk the flour, cornstarch, baking powder, and salt together in a medium bowl.
  2. In a large bowl using a handheld mixer or stand mixer fitted with a paddle attachment, beat the butter and sugar together on medium-high speed until combined and creamy, about 2 minutes. Beat in the egg and vanilla. Scrape down the sides and bottom of the bowl as needed. Add the dry ingredients to the wet ingredients and beat on low speed until combined. Once completely combined, cover the dough tightly with plastic wrap and chill in the refrigerator for 20 minutes and up to 1 day. (Let dough sit out at room temperature for 20-30 minutes if chilling longer than a couple hours because the dough will be quite stiff and flattening onto pan will be tough.)
  3. Preheat oven to 350°F (177°C). Grease a 12-inch pizza pan with nonstick spray (even if it’s a nonstick pan). Remove chilled cookie dough from the refrigerator and press onto the pizza pan in a 9–10-inch circle, about 1/3-inch thick. Bake for 17–19 minutes or until the edges are very lightly golden brown. Avoid over-baking. Cool crust completely before decorating.

  1. In a medium bowl using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the cream cheese and butter together on medium speed until smooth, about 2 minutes.
