Cinnamon Roll Pancakes

Breakfast is my favorite meal of the day. You can get so creative with what you make and this fun recipe is a family favorite.

I have been doing a lot of fun things for brunch and breakfast on the weekends, because school mornings are so hustle and bustle.

FAQs

1. Can I use whole wheat flour instead of all-purpose flour?

Absolutely! Whole wheat flour will give your pancakes a nuttier flavor and added fiber. However, they might be a bit denser than pancakes made with all-purpose flour.

2. Can I make the batter ahead of time?

We wouldn’t recommend it because the leavening agents start working as soon as they get wet and the batter might not rise as well if it sits too long.

Tips and Tricks

  1. Don’t overmix the batter, it can lead to tougher pancakes. It’s okay if there are a few lumps.
  2. Pour the cinnamon filling into a squeeze bottle. This will help you get a perfect cinnamon swirl.
  3. Allow the pancakes to cook until bubbles form on the surface before flipping them. This ensures a perfect golden brown finish.

Cinnamon Roll Pancakes

This recipe is fun, but you need to be careful with the way you cook it. All instructions are included in the recipe card below but this is definitely not the way you make your regular pancakes. You have to have a bit more care with these yummy cinnamon roll pancakes.

How do you make these cinnamon roll pancakes?

  • Prepare pancake mix according to package instructions Open cinnamon roll can.
  • Set icing to the side to come to room temperature Separate each cinnamon roll from one another.
  • Heat pan over medium-low heat.
  • Spray with a nonstick butter-flavored cooking spray.
  • Unwrap the cinnamon roll, place it in the pan and loosely rewrap it
  • Add 1/4 cup of pancake mix all over the cinnamon roll filling in the open spaces. Add 2 tbsp water to the hot skillet and cover.

  • Cook on first side 2-3 mins (until water evaporates)
  • Flip it over add another 1-2 tbsp of water and cover.
  • Remove from pan and top with icing.
  • The residual heat will melt the icing.

Variations

  1. Vegan Version: Use almond milk and a flaxseed egg substitute, and ensure your sugar is vegan.
  2. Gluten-Free Version: Use a gluten-free flour blend and ensure your baking powder is gluten-free.
  3. Pumpkin Cinnamon Roll Pancakes: Add half a cup of pureed pumpkin to your batter for a fall-inspired twist.

Where to Serve

These pancakes are perfect for breakfast or brunch. They’re also a lovely surprise for birthdays, Mother’s Day, or any special morning. Why not even as a dessert after dinner?

Storage

Leftover pancakes can be stored in the refrigerator for up to 3 days or in the freezer for up to 2 months. Make sure they are completely cool before wrapping in plastic wrap or placing in a zip-top bag.

Cinnamon Roll PancakesBake the cinnamon rolls as directed on the package, making sure to roll them out long and not too thick. Now comes the fun part!

Cinnamon Roll Pancakes

Cut the cinnamon rolls into small pieces and place evenly over your pancake. Make sure there is a decent amount of dough for each piece (I call this the “filling” – makes it feel like you’re really eating a big ol’ cinnamon roll).

Common Problems and How to Avoid Them

1. Pancakes not fluffy: This could be due to overmixing the batter or not letting it rest. Mix until just combined and let the batter rest for a few minutes before cooking.

2. Cinnamon filling oozes out: If too much filling is added, it can leak out and burn. Use a squeeze bottle for precise application and don’t overfill.

Topping Options

While these pancakes are delicious on their own, you can add toppings like:

  1. A dusting of powdered sugar for extra sweetness.
  2. A handful of chopped pecans or walnuts for some crunch.
  3. A dollop of whipped cream for a luxurious touch.
  4. Fresh fruit like berries or sliced bananas for a fresh twist.

Place another pancake on top of the dough, again being careful with how thick you make this pancake. I don’t use syrup with these because they are so sweet but go ahead and eat them however you prefer your pancakes best!

It’s very important that you use a skillet WITH A TOP. The top will come in handy for this cooking process.

What ingredients do you need for these Cinnamon Roll Pancakes? Just 3 simple ingredients:

  • 5 GRANDS Cinnamon Rolls
  • Pancake batter (enough for 8-10 pancakes)
  • Water

Why This Recipe Works

This recipe ingeniously combines the best of both worlds: the warm, comforting flavors of a cinnamon roll and the fluffiness of pancakes. The cinnamon filling swirled into the pancakes caramelizes on the griddle, providing a delightful crunch in contrast with the soft pancake. The cream cheese glaze adds a tangy sweetness that perfectly balances the rich cinnamon. Altogether, it’s a dish that will make your taste buds dance in delight. It’s the perfect treat for any time of the day!

Notes

If it smells like it is burning-it is. Turn the fire down. We are steaming the pancake/cinnamon roll to cook it.

This works best with the 5 count large Grands biscuits. If using the smaller one, they don't easily come apart and it is a little more difficult.

You could dip the smaller ones in pancake batter and follow the same process of steaming them but it takes a little longer.

This needs to be medium-low heat as to not overcook the batter too quickly where the inside is still raw.

If it is raw in the center, your fire is up too high.

Rinse the pan to cool it back down to control the temperature.

I would recommend only doing one at a time, I tried two at once, but they burned.
