I’ve been a Mario fan since I was old enough to hold a controller — this is not a casual relationship. So when the movie came out and my kids were suddenly as obsessed as I was, making something Mario-themed for movie night was a non-negotiable. These mushroom cupcakes were the result, and they turned out so much better than I expected. The red dome shape, the white dots, the instantly recognizable silhouette — they look like they took hours and they actually take about 40 minutes, including the time you let the red food color develop.

This is a decorating tutorial, not a baking recipe. Use your favorite cupcakes — homemade, box mix, or store-bought — and my homemade vanilla buttercream frosting. The technique is what matters here, and I’m going to walk you through every step so yours come out looking exactly right.

What ingredients do you need for these Super Mario cupcakes?

  • 1 3/4 Cups of Buttercream
  • Red Food Gel Color 

Cupcakes: Any cupcake works — chocolate, vanilla, funfetti. The flavor is completely up to you since the decoration is the whole point. If you want to match the Mario theme fully, chocolate cupcakes under a red dome look extra dramatic.

Buttercream: 1¾ cups total. You’ll divide it: ¼ cup stays white (for the dots), the remaining 1½ cups gets colored red (for the dome). If your buttercream is off-white rather than pure white, add a tiny drop of white food gel to the portion reserved for dots before piping — it makes the contrast sharper and the mushroom look more authentic.

Red food gel color: Gel color, not liquid. Liquid food coloring adds moisture that can affect buttercream consistency and produces a lighter pink-red result. Gel gives you the deep, saturated red you need for the Mario mushroom look. Start with 3–4 drops and adjust — and read the tip below about letting the color develop before you add more.

Start by dividing your buttercream. Scoop out about ¼ cup and transfer it to a piping bag — this is your white buttercream for the dots. Twist and secure the end and set it aside. Leave the rest in the bowl.

Add 3–5 drops of red food gel to the larger portion and mix until the color is fully incorporated. Here’s the most important tip for getting that deep Mario-red: if the color looks more pink than red, don’t immediately add more dye. Cover the bowl and let it sit for 15–30 minutes. Buttercream color continues to develop as it rests, and what looks pale right after mixing will often deepen significantly. Add more drops only after the rest period if needed.

Line up your cupcakes. Use an ice cream scoop to place a generous mound of red buttercream on top of each one — you want a tall dome, not a thin layer. The height is what gives you the mushroom cap shape.

Now for the technique that makes everything work: place your offset spatula in a glass of warm water for 10–15 seconds, then wipe it dry with a paper towel. The warm spatula melts the surface of the buttercream just slightly as it moves across it, which lets you smooth and shape without dragging or tearing. Starting from the top of the mound, move the spatula downward and outward in one motion to push the dome into a rounded cap shape. Work around all sides. Reheat the spatula in warm water and wipe it between passes — a cold spatula will drag.

Once the shape is set, use the warm spatula to trim any excess buttercream from the base of the dome, keeping the rounded cap shape clean at the edges.

Put on food-safe gloves. Use your palm to gently round out any imperfections — a light press from above will push any flat spots into a more dome-like curve. Don’t overthink this part. Real Mario mushrooms aren’t perfectly smooth either.

Cut the tip of your white buttercream piping bag to create a small opening. Pipe 3–5 small filled circles onto the red dome of each cupcake — they should look like the white spots on the classic Super Mario mushroom cap. Keep them slightly irregular; perfect circles look less organic than slightly uneven ones.

Reheat your offset spatula, wipe it, and use just the corner to gently press and smooth each white circle. Move carefully — you want to flatten the piped dots slightly without touching the red buttercream around them. Take your time on this step.

TIPS

Gel color only. Liquid food coloring produces pink, not red, and can thin out your buttercream. Gel is non-negotiable for this particular look.

Let the red develop. Cover and rest the colored buttercream for 15–30 minutes before deciding to add more dye. The color deepens significantly on its own.

Warm spatula = smooth dome. This is the technique that separates a clean mushroom shape from a messy one. Reheat the spatula in warm water before every pass. Cold spatula drags; warm spatula glides.

Imperfection is correct. The Mario mushroom isn’t a perfect sphere. Don’t stress about getting a flawless dome — slightly organic shapes actually look more like the game graphic than machined-perfect ones do.

Work one cupcake at a time. Don’t apply all the buttercream domes and then come back to smooth — the buttercream begins to crust as it sits and becomes harder to shape. Apply, smooth, and move to the next.

VARIATIONS

1-Up Green Mushrooms: Use green gel food color instead of red for the 1-Up mushroom from the game. Keep the white dots the same. These are actually easier to achieve the right color with gel since green develops quickly.

Toadstool assortment: Make a batch with red domes (Super Mushroom) and a batch with green domes (1-Up Mushroom) for a party spread that covers both iconic variants.

Mini versions: Use mini cupcakes and scale down the buttercream proportions. Mini mushroom cupcakes work great as table centerpieces alongside a larger Mario-themed cake.

Character faces: Add two small white circles near the bottom of the dome for eyes and use a black food marker to dot the pupils, turning each mushroom into Toad from the game.

Do I have to make homemade cupcakes for this?

No — store-bought cupcakes work perfectly. The decoration is the entire point of this tutorial. Use whatever cupcake base you prefer, homemade or purchased.

Why isn’t my buttercream turning deep red?

Red is one of the most notoriously difficult colors to achieve with food dye. The most common fix is patience — cover the bowl and let the colored buttercream rest for 15–30 minutes. The color continues developing after mixing and what looks pink often turns a deep red on its own. Gel color, not liquid, is also essential.

What’s the point of the warm water for the spatula?

Heating the offset spatula slightly melts the surface of the buttercream as you smooth it, letting you shape and glide without dragging or tearing. It’s the difference between a clean dome shape and a pulled, rough surface.

Can I use regular food coloring instead of gel?

My white dots are bleeding into the red. What happened?

These super fun Super Mario themed mushrooms cupcakes are great for super mario parties and anytime!

Ingredients

  • 6 Cupcakes
  • 1 3/4 Cups of Buttercream
  • Red Food Gel Color

Instructions

  1. -Start by separating your buttercream. Take 1/4 of the buttercream out of your bowl and put into a piping bag. 
  2. -Secure the end of the piping bag and set it to the side for later.
  3. -In the bowl with the remaining buttercream, put 3-5 drops of red food color.
  4. -Mix until all the buttercream is red.
  5. -Gather your Cupcakes and line them up for easy assembly 
  6. -Using an Ice cream scooper, scoop the red buttercream on top of the cup cake.
  7. -Get your offset spatula, place it in some warm/hot water. Then wipe it with a sheet of paper towel.
  8. -Moving quickly, use the spatula to smooth the mound of buttercream. Start from the top and lightly move the spatula down and outward to help form the mushroom shape.
  9. -Do this to all sides of the cupcake. 
  10. -Once the shape is set, clean of the spatula and place it back in the warm water.
  11. -Use the same spatula to cut off the extra icing that is now at the bottom of the mound but keep the same mushroom shape.
  12. -Put on some food safe gloves so you don’t get any color on your hands, use your hand to smooth out and curve around edges of the buttercream. If your mound is misshapen you can lightly lay your palm over it to round it out.
  13. -Grab your piping bags with white buttercream and cut the tip to create a small hole. 
  14. -Pipe small circles over the red buttercream and fill them in.
  15. -Now grab your offset spatula from the warm water, wipe it with a paper towel again and use it to smooth out the white circles. Be very careful and gentle to not touch the red icing.
  16. -Repeat this step for each cupcake and your done.
  17. -Serve and enjoy.

Notes

-Your Icing doesn't have to look perfect because real mushrooms aren’t .

-If your icing isn’t turning the deep red color you want, let it sit in a bowl covered with a lid for 15- 30 minutes and the color should develop more. 

-These mushroom cupcakes can be stored in a airtight container in a cool dry place for 3-4 days.

-If you place them in the fridge remember that can cause condensation and alter the appearance of the white circles.
