This amazing hot mexican street corn dip is super flavorful and great for appetizers!

Ingredients

  • 4 Tbsp unsalted butter
  • 4 cups corn kernels, frozen or canned
  • 1 jalapeño, seeded and diced
  • 3 Tbsp mayonnaise
  • 4 Tbsp crumbled cotija cheese
  • 2 Tbsp chopped fresh cilantro leaves
  • 1 clove garlic or ¼ tsp garlic powder
  • Juice of 1 lime
  • 4 oz. cream cheese , room temperature
  • ¼ tsp Tajin seasoning
  • a pinch salt and pepper
  • ½ cup shredded cheddar cheese
  • Additional lime juice, tajin, cilantro and cojita for garnish

Instructions

  1. In a mixing bowl, combine sour cream, mayo, lime juice, tajin, chopped cilantro, cojita cheese. Set aside.
  2. Add corn and jalapeno to a cast iron skillet in an even layer on high heat. Cook for 3-5 minutes without stirring. The longer you leave it the more char you will achieve.
  3. If using fresh garlic, Turn down the heat to medium and add garlic and butter stirring until fragrant and cooked through.
  4. Pull off the heat and stir in cream cheese and shredded cheese until melted.
  5. To serve warm: add sour cream mixture and stir until combined.
  6. Serve immediately.
  7. To serve cold: wait until corn mixture cools and add sour cream mixture, stir until combined
  8. Sprinkle with lime juice, tajin, cilantro and cojita and serve with chips
