Ingredients

• 8 ounces chorizo
• 5 tablespoons unsalted butter
• ¼ cup flour
• 2 cups of milk
• 1 cup sharp cheddar, grated
• 1 cup Oaxaco cheese, grated
• 8 slices of white american cheese
• 2 tablespoons hot sauce
• 1 jalapeno, chopped
• ½ red onion, chopped
• 1 roma tomato, chopped
• 4 stems of cilantro
• Extras:
• Salt and Pepper
• Tortilla Chips

Instructions

1. In a medium saucepan cook the chorizo at medium heat until brown and completely cooked through.
2. Strain out the meat and set aside, but keep the excess juices in the pan.
3. Add the butter into the pan over medium heat and melt.
4. Add the flour to the pan and whisk together to create a roux.
5. Slowly add the milk, ½ a cup at a time, until it is a creamy mixture.
6. Add all the cheeses and melt together over the heat.
7. Lastly add the hot sauce as well as salt and pepper a layer over the pan and mix together.
8. If needed, add more salt and pepper to your own liking (keep in mind that the chorizo added later will add a bit of salty flavor as well).
9. Let that sit over low heat covered while you chop the onion, jalapeno, tomato and cilantro.
10. Pour the finished queso into a bowl.
11. Add the chorizo, jalapenos, onions, cilantro and tomatoes, mixing together.
12. Enjoy while hot with tortilla chips

Notes

If the mixture is too thick for your liking after adding all the cheeses, feel free to add a bit more milk to thin out.
