Who knew that you could add soda to create a really tasty cupcake, but now you have the greatest secret!
What ingredients do you need for these awesome Pineapple Soda Cupcakes?
- 1 yellow cake mix
- 1/3 cup vegetable oil
- 3 large eggs
- 1 ¼-1 ¾ cups Pineapple soda
- *Pineapple Jello (divided)
- Yellow, orange or green cupcake liners (Get them at Walmart or on Amazon)
Frosting Ingredients
- 2 sticks salted butter, softened
- 1 teaspoon vanilla extract
- 1 teaspoon salt
- 4 cups powdered sugar
- 1 tablespoon half and half or whole milk (not pictured)
- 2 tablespoons Pineapple soda
- *Pineapple Jello (divided)
- *yellow food coloring (optional)
- 1 large piping bag, 1 large round frosting tip
- Paper straws (optional)
- Wilton’s Pineapple Royal Sugar Decorations (optional)
Plus it’s easy to make with a box of cake mix. The straws inside of the cupcakes make these even more fun and festive.

Easy and Fun Pineapple Soda Cupcakes Made With Cake Mix
This super easy recipe for Pineapple Soda Cupcakes is so fun to serve at birthday parties!
Ingredients
- 1 yellow cake mix
- 1/3 cup vegetable oil
- 3 large eggs
- 1 ¼-1 ¾ cups Pineapple soda
- *Pineapple Jello (divided)
- Yellow, orange or green cupcake liners (Get them at Walmart or on Amazon)
- Frosting Ingredients
- 2 sticks salted butter, softened
- 1 teaspoon vanilla extract
- 1 teaspoon salt
- 4 cups powdered sugar
- 1 tablespoon half and half or whole milk (not pictured)
- 2 tablespoons Pineapple soda
- *Pineapple Jello (divided)

- 1 large piping bag, 1 large round frosting tip

Instructions
- Preheat oven to 350 degrees. Spray or line a standard muffin tin.
- Steps 1-2: Add cake mix to a large mixing bowl. Using a hand or stand mixer, add in your oil, eggs, and soda, and mix on medium until well incorporated. Mix in *1/2-3/4 of the jello.
- Step 3: Add batter into the muffin tin until each is about 2/3 full. Bake for 18-20 minutes, or until a toothpick comes out clean. Allow to cool completely before frosting.
Directions for Frosting:
- Step 4: In a large mixing bowl, using an electric hand or stand mixer, cream the butter, and beat until light and fluffy (about 2 minutes).
- Steps 5-6: Mix in the vanilla extract the remaining jello. Mix in the salt.
- Step 7: Mix the half and half or milk and Pineapple soda together. (If you don’t, the carbonation in the soda will break your frosting)
- Steps 8-9: Slowly mix in the powdered sugar, 1 cup at a time, while adding a bit of the liquid mixture from Step 7 in between each cup. Continue to mix for 1-2 minutes or until creamy and forms stiff peaks, but don’t overmix! Add in food coloring if desired. Start with 1-2 drops and mix. Continue until color is achieved.
- Step 10: Prepare piping bag and fill bag with frosting and frost your cupcakes. Add your Wilton’s Pineapple Royal Sugar Decorations and straw if desired. Enjoy! Makes 24 cupcakes.
- *We found some jello flavors in the frosting can be punchy. A straw poll told us kids like this, but some adults didn’t. So, we suggest for kids to use ½ the jello in the mixes and ½ in the frosting. For adults, use ¾ of the jello in the mixes and ¼ in the frosting. This has worked beautifully!
