For these we have added sour cream, cheese and bacon. It’s like having a loaded baked potato but in small edible bites. They are so good!
What goes well with loaded baked potatoes?
Just about anything! These would be great as a side dish to chicken, steak, or fish. Or enjoy them as an appetizer with your favorite dipping sauce.
These potatoes are best served warm, straight from the oven. But they will still be delicious at room temperature.

How long will these potato bites last?
Loaded baked potato slices are best eaten the same day they are made. But if you have leftovers, store them in an airtight container in the fridge for up to 3 days. reheat in a 350 degree oven until warmed through.
What ingredients do you need for these tasty appetizers?
2-3 large Russet Potatoes
1/4 cup olive oil
1/2 packet Ranch seasoning
1-2 tsp black pepper
1 cup mozzarella cheese
1 cup 4 cheese Mexican or Italian blend shredded cheese
5 slices of cooked bacon
The best part about these loaded potato slices is the fact that these are way more snackable than a full loaded baked potato. So, if you are looking for an appetizer that will be a hit with your guests, look no further! These loaded baked potato slices are sure to please.

Easy Loaded Baked Potato Slices
2-3 large Russet Potatoes
1/4 cup olive oil
1/2 packet Ranch seasoning
1-2 tsp black pepper
1 cup mozzarella cheese
1 cup 4 cheese Mexican or Italian blend
Ingredients
- 2-3 large Russet Potatoes
- 1/4 cup olive oil
- 1/2 packet Ranch seasoning
- 1-2 tsp black pepper
- 1 cup mozzarella cheese
- 1 cup 4 cheese Mexican or Italian blend
Instructions
- Preheat the oven to 350
- Slice Potatoes to 1/2 inch thickness
- Brush with olive oil and sprinkle on Ranch seasoning and black pepper
- Flip over each potato, brush with olive oil, sprinkle with ranch and black pepper
- Bake for 20 mins
- Cook the bacon and allow to drain and cool.
- After 20 mins, turn the oven up to 375 and flip each piece over
- Bake for an additional 15 mins
- Remove from oven and turn up to 425
- Top each popper with cheese and crumbled bacon.
- Return to oven for 5 mins.
- Serve hot/warm with sour cream.
- Sour cream options:
- Add 1 tsp of smoked paprika to 1/3 cup sour cream for an extra kick.
- Add 1 tbsp of ranch seasoning to 1/3 cup sour cream for a tangy dip
