It’s been a while since I’ve been on a beach–as a matter of fact, I think about my trip to St. Lucia at the end of last year–a lot. The ambiance was amazing, the beaches were beautiful and to be honest I had absolutely no worries as I sipped my beachy drink in my cabana.
I made a promise to myself after that trip to recreate that drink-in-a-cabana feeling at home, and this is the closest I’ve gotten. Strawberry, watermelon, spiced rum, and lime juice in a blender — the whole thing takes five minutes and tastes like a poolside vacation in a glass.
The recipe is one serving, but it doubles, triples, and quadruples cleanly — same ratios, just multiply. For a crowd, blend in batches and pour straight into a pitcher.
A few things that make a difference:
Fresh watermelon is worth using when it’s in season — the flavor is noticeably more vibrant than frozen. Outside of peak summer, frozen watermelon chunks work well and eliminate the need for as much ice, which keeps the flavor from getting diluted.
The “sweetened lime juice” in the recipe refers to bottled sweetened lime juice (like Rose’s) rather than fresh lime juice with sugar added separately. If you want to use fresh lime juice, squeeze one lime and add a teaspoon of simple syrup to compensate for the sweetness.
For the sugar rim: run a lime wedge around the rim, then dip in sugar. Do this before blending so the rim has time to dry slightly — a wet rim loses the sugar coating immediately when the drink is poured.
I remember ordering virgin strawberry daiquiris as a kid every chance I got — this is just the grown-up version with spiced rum doing the work the extra sweetness used to do. Still just as good without the rum if that’s your preference.
What Ingredients Do You Need To Make A Strawberry Watermelon Daiquiri?

All you need is sweetened lime juice, fresh strawberries, spiced rum and chopped watermelon. All of the perfect summer flavors! Plus it’s a really pretty drink to have on a girls night, a movie night or even simply on the patio in a moment of relaxation.
How To Make It:
Step 1: If doing a sugar rim, run a lime wedge around the rim of your glass and dip in sugar now, before blending.
Step 2: Add ice, rum, and lime juice to the blender first — liquid and ice at the bottom helps the blender catch and blend efficiently.
Step 3: Add the strawberries and chopped watermelon on top.
Step 4: Blend on low for 10 seconds, then high until completely smooth and the ice is fully incorporated with no chunks. Pour into prepared glass and serve immediately.

Yes — frozen strawberries and watermelon produce a thicker, slushier texture and reduce how much ice is needed. Outside of peak watermelon season when fresh fruit is less flavorful, frozen is actually a good choice. No need to thaw first — blend from frozen.
