Blackstone Sweet and Tangy Pineapple Bowls (Easy Chicken Recipe!)
When you need to feed a hungry family, these Pineapple Bowls hit the spot. Made with the perfect amount of savory and sweetness, you can’t go wrong making these bowls.

There are weeknight dinners and then there are dinners that make your family stop scrolling, put down their phones, and actually sit at the table because they want to see what you made. These Blackstone pineapple bowls are the second kind.
Juicy chicken thighs, colorful peppers, baby corn, and sweet pineapple chunks all cooked up on the Blackstone and tossed in a sweet and tangy sauce — then served right inside a fresh pineapple half. It looks like something you’d order at a restaurant on vacation. It takes about 30 minutes on a weeknight. That combination is everything.
This has been one of my most-pinned recipes for a reason. Once you make it, you’ll understand why it keeps showing up on people’s feeds. Let’s get into it.

Why You’ll Love These Pineapple Bowls
The Blackstone gives everything that slightly caramelized, griddle-seared flavor you just can’t replicate in a regular pan!
- The pineapple IS the bowl — zero extra dishes and a presentation that seriously impresses
- Sweet, savory, and tangy all in one bite — it’s a flavor combination that the whole family goes crazy for
- Ready in about 30 minutes start to finish, making it totally doable on a busy weeknight
- Highly customizable — swap the protein, change the veggies, adjust the sauce
- Great for meal prep — stores well in the fridge for up to 5 days

What Is a Pineapple Bowl?
If you’ve never made one before — a pineapple bowl is exactly what it sounds like. You cut a fresh whole pineapple in half lengthwise, scoop out the flesh (which you then cube and cook right into the dish), and use the hollowed-out pineapple shell as your serving vessel. It’s a serving hack that also happens to look stunning and adds a little extra pineapple flavor to every bite from the juices left in the shell.
It’s a fun presentation trick that works for everything from casual weeknight dinners to backyard parties. And when you make it on the Blackstone, the whole thing comes together fast.

Ingredients Needed for Teriyaki Chicken Pineapple Bowls

Boneless Chicken Thighs (Cubed): Succulent, tender cubes of chicken provided the perfect base for this dish.
Red Onion (Diced): Diced red onion adds a mild but flavorful boost to the meal.
Can Baby Corn: Crispy and sweet baby corn is a perfect complement to the onions and peppers.
Orange Pepper (sliced): The bright orange hue of the pepper contrasts beautifully with the other vegetables while providing an irresistible sweet flavor.
Yellow Pepper (sliced): A yellow pepper gives even more vibrant color, along with a slightly smoky taste. Gotta have the bell peppers!
Red Pepper (sliced): Red peppers offer a subtle heat that adds depth to the dish.
Fresh Pineapple: Sweet and juicy pineapple adds a tropical twist to this dish, balancing out all the vegetables perfectly. The pineapple can be in any form, pineapple chunks, slice pineapple, all tastes good when making pineapple boats.
Sweet & Tangy Sauce: This tasty sauce brings everything together with pops of sweetness and tanginess that make this dish truly delicious.

Optional to add: green onions, sesame oil, brown sugar, a tablespoon of pineapple juice, fresh ginger, garlic powder, homemade teriyaki sauce, and soy sauce.
How to Make Blackstone Pineapple Bowls
Step 1: Prep Your Pineapple
Slice the whole pineapple in half lengthwise, keeping the stem and leaves intact — that’s part of the presentation. Use a sharp knife to cut around the edges of each half and then scoop out the flesh, leaving about a half inch of pineapple wall so the bowl holds its shape. Cube the scooped pineapple flesh into bite-sized pieces and set aside. The hollowed-out halves are your bowls — set those aside too.
Step 2: Preheat the Blackstone
Heat your Blackstone griddle to medium-high heat. Give it a few minutes to come up to temperature — you want it hot enough that the chicken sears when it hits the surface. Add a drizzle of oil and spread it with your spatula.
Step 3: Cook the Chicken
Add the cubed chicken thighs to the hot griddle in a single layer. Let them cook without moving for 2-3 minutes so they develop a good sear, then flip and cook another 2-3 minutes. You’re looking for golden brown on the outside and fully cooked through — internal temp of 165°F. Season with a pinch of salt, pepper, and garlic powder while they cook.
Step 4: Add the Vegetables and Pineapple
Push the chicken to one side of the griddle and add the diced red onion, sliced peppers, baby corn, and cubed pineapple to the open space. Cook the vegetables for 3-4 minutes, stirring occasionally, until they soften and get a little color. Then combine everything together on the griddle and toss.
Step 5: Sauce It Up
Pour the sweet and tangy sauce over the chicken and vegetable mixture. Toss everything together so it’s all well coated. Let it cook for another 1-2 minutes so the sauce reduces slightly and caramelizes onto everything. This is the step that makes the whole thing smell incredible — you’ll know it’s ready.
Step 6: Fill Your Pineapple Bowls and Serve
Spoon the chicken and vegetable mixture into your pineapple bowl halves. Garnish with sliced green onions and sesame seeds if you have them. Serve as-is or over a bed of steamed rice for a complete meal. Either way, prepare for people to be very impressed.
FAQs:
Yes! The recipe even suggests using chicken breasts if preferred, though thighs add more rich flavor
A Blackstone griddle makes the prep quick and gives that signature seared flavor. If you don’t have one, a regular griddle or grill pan will work too
Serve with rice for a complete meal. Many people add fresh herbs like cilantro and a lime squeeze to brighten the flavors.

Tips for the Recipe
Keep in mind that ripe pineapples work best! You can chop pineapple up and add it to the recipe. Throw the pineapple flesh away. Grab a couple of whole pineapples from the store!
Chicken breasts work great for this recipe, but you can also use canned pieces of chicken! Chicken teriyaki bowls taste good, no matter what kinda chicken you use. You want smaller pieces of chicken for this recipe.
Making this recipe on the Blackstone Griddle is a good idea! If you don’t have a Blackstone then any kind of griddle will work.
Pour lots of sauce into the bowl. You don’t want to overdo it, but the sauce is what makes the chicken.

How to Store Pineapple Bowls
This recipe is great for meal prepping, since it can be stored in the fridge for up to five days. It also freezes well, so you can keep batches stored in the freezer for up to six months!
Have you ever made Pineapple bowls? They are super versatile and a great meal for any night of the week!
Variations to Try
- Spicy version: Add sliced jalapeño to the vegetable mix and a drizzle of sriracha to the sauce. The heat against the sweet pineapple is incredible.
- Hawaiian BBQ: Swap the sweet and tangy sauce for your favorite Hawaiian BBQ sauce for a smokier, deeper flavor profile.
- Shrimp pineapple bowls: Use large shrimp instead of chicken — they cook even faster (about 2 minutes per side) and are amazing with the sweet sauce.
- Add rice to the bowl: Layer the bottom of the pineapple bowl with steamed rice before adding the stir fry for an all-in-one complete meal presentation.
- Teriyaki version: Use homemade or store-bought teriyaki sauce and add a sprinkle of sesame seeds and a drizzle of sesame oil right before serving.

This is one of those recipes that looks way more complicated than it actually is — and that’s exactly why I love it. You’re scooping out a pineapple and firing up the griddle, and somehow the result is this gorgeous, restaurant-quality meal that lands on the table in about 30 minutes.
Every time I make these pineapple bowls the kids want to be involved, whether it’s helping scoop the pineapple or choosing which color pepper goes in first. It’s the kind of dinner that turns a regular Tuesday into a little moment — and I’m always here for more of those.
