Slow Cooker Chicken and Wild Rice Soup Recipe

This amazing Chicken and wild rice soup comes together perfectly in the slow cooker with amazing flavor!

Ingredients

  • 4 chicken breasts
  • Salt & pepper to taste
  • 3 celery stalks, chopped
  • 1 sweet potato, diced
  • 1 tablespoon garlic, minced
  • 1 onion, chopped
  • 1 teaspoon dry rosemary
  • 1 teaspoon dry sage
  • 6 cups chicken broth
  • 1 bay leaf
  • 4 cups kale, chopped
  • 1 tablespoon lemon juice
  • 1 cup wild rice blend
  • 2 tablespoons butter
  • 2 tablespoons flour
  • ½ cup half & half

Instructions

  1. Season chicken with salt and pepper and place in slow cooker 
  2. Stir together celery, sweet potato, garlic, onion, rosemary, sage, lemon juice, rice, broth, and kale 
  3. Pour over chicken, add bay leaf on top 
  4. Cook on low for 6-8 hours 
  5. Remove chicken, shred, set aside 
  6. Melt butter and whisk in flour until browning 
  7. Add in half & half and cook until thickening 
  8. Stir into slow cooker 
  9. Return chicken to slow cooker and stir all until well combined 
  10. Serve and enjoy!
