  • 1 large piping bag, 1 large star tip

Ingredients

  • Cupcake Ingredients:
  • 1 15.25-ounce white cake mix
  • 1 ¼ cups water
  • 1/3 cup vegetable oil
  • 4 egg whites
  • Cupcake liners (Get them at Walmart or on Amazon)
  • Frosting Ingredients
  • 2 sticks salted butter, softened
  • 1 teaspoon vanilla extract
  • 3-4 cups powdered sugar
  • 3 tablespoons half and half

Instructions

    Directions for Cupcakes:

    1. Preheat oven to 350 degrees. Spray or line a standard muffin tin.
    2. Step 1: Add cake mix to a large mixing bowl. Using a hand or stand mixer, mix in your water, oil, and egg whites on medium until well incorporated. 
    3. Step 2: Add batter into the muffin tin until each is about 2/3 full. Bake for 18-20 minutes, or until a toothpick comes out clean. Allow to cool completely before adding candy filling and frosting. 

    Directions for Frosting:

    1. Steps 3-4:  In a large mixing bowl, using a hand or stand mixer, cream the butter for 2 minutes, until light and fluffy. Mix in the vanilla extract and salt. 
    2. Steps 5-6: Slowly mix in the powdered sugar, 1 cup at a time, while alternating 1 tablespoon of the half and half.  Continue to mix until creamy and stiff peaks form. Mix in the luster dust. The amount depends on how shimmery you want your frosting to be!
    3. Step 7: Divide the frosting into 3 containers. Add one food coloring to each container, 1 drop at a time and mix until desired color is achieved. 
    4. Steps 8-9: Add each color to its own small piping bag until you have 3 bags of frosting. Next you will insert your 3 smaller piping bags into the large, prepared piping bag. 
    5. Steps 10-11: Before frosting your cupcakes, squeeze out a bit onto a plate until you see all the colors come out. Frost your cupcakes and sprinkle with the mermaid sprinkles.
    6. Steps 12-13: Melt your chocolate in a microwave safe bowl. Add 1-2 drops of food coloring and add to your mermaid tail mold. Place in the fridge until hardened. Gently pop the chocolate tails from the mold and insert into the top of the cupcakes. Enjoy!
