Ingredients

  • 1lb chicken breast cubed
  • 2 cups fresh spinach
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 2 cups chicken broth
  • 1 cup matchstick carrots
  • 3 cups heavy cream
  • 16 oz gnocchi
  • 1 Tsp Salt
  • 1 Tsp Pepper
  • Cooking Spray

Instructions

  1. Turn the instant pot onto the sauté setting.
  2. Place the chicken, onion & celery into the instant pot. Lightly spray with cooking spray & sauté until the chicken is browned.
  3. Pour in the chicken broth & carrots and mix well.
  4. Place the lid on the instant pot & seal shut.
  5. Turn the instant pot onto high manual for 5 minutes.
  6. Quick release.
  7. Turn the instant pot onto sauté.
  8. Stir in gnocchi, spinach & heavy cream.
  9. Boil & stir frequently for about 3-5 minutes or until the gnocchi has fully cooked.
  10. Serve & enjoy.
