Easy Homemade Pumpkin Waffles with Cinnamon Maple Syrup

Cook Time: 15 minutes
Total Time: 22 minutes

Breakfast is made with these easy homemade pumpkin waffles! The cinnamon maple syrup is so good as a topping!

Ingredients

  • 1 cup maple syrup
  • 1 cinnamon stick
  • 1.5 cups all purpose flour
  • 1 cup bread flour 
  • 1.5 cup whole milk
  • 1/3 cup light brown sugar, packed
  • 1/4 cup unsalted butter, melted,
  • 1 cup canned pumpkin
  • 1 tsp baking soda
  • 1/2 tsp salt

Instructions

For the Syrup:

  1. In a small saucepan heat maple syrup and cinnamon stick. 
  2. As soon as it bubbles remove from heat and let steep 15 mins. 
  3. Remove cinnamon stick and set aside to cool

Waffles: 

  1. Heat the waffle iron 
  2. In a medium bowl whisk all purpose flour, bread flour, baking soda, cinnamon and salt. 
  3. In a separate bowl mix pumpkin, milk, eggs, brown sugar and melted butter.
  4. Spray the waffle iron with non stick cooking spray
  5. Add 1/4 or 1/3 cup batter (depending on the size of your waffle iron. 
  6. Cook according to iron instructions.
  7. Serve with warmed cinnamon maple syrup and enjoy

Notes

You can use any milk you’d like, including buttermilk.  If using buttermilk, increase it to 2 cups.
