CREAMY SPINACH ARTICHOKE PENNE RECIPE
I’ve got a super easy recipe for you today!
I am a huge carnivore, I’m pretty sure I came out of my mother’s womb asking for a medium well prime rib! When I find alternate meatless meals, I get really excited!
I originally saw this recipe on the Tasty Facebook Page. That page is incredible and has a crazy following (62 MILLION Likes!) and for good reason–the recipes and the videos that accompany them makes it all seem so easy and so well…tasty! I’ve tried a few of these recipes and they did not disappoint! This time I actually took step by step pics so that I could share it with you guys!
I bought the artichoke hearts from the freezer section and I used the best cream cheese in the world: Philadelphia Cream Cheese.
I made a couple of tweaks because the original flavor was a tad bland, but that might just be my taste buds. My changes are bolded:

Servings: 3-4
Ingredients
- Servings: 3-4
- INGREDIENTS
- 2 Tbsp. olive oil
- 5 oz spinach
- 1 cup artichoke hearts, drained
- 16 oz cream cheese, softened
- 2 Tbsp. garlic powder
- 2 tsp salt
- 2 tsp pepper
- 2 cups milk
- 4 cups cooked penne
Instructions
- Heat oil in a large pot over medium heat.
- Add spinach, cooking until wilted, then add artichoke hearts, cooking for 1 minute.
- Next, add cream cheese until melted, stirring until there are no lumps.
- Sprinkle in garlic powder, salt, pepper, and milk, stirring until smooth.
- Add pasta and mix until pasta is evenly coated. Serve!
PREPARATION
Heat oil in a large pot over medium heat. Add spinach, cooking until wilted, then add artichoke hearts, cooking for 1 minute. Next, add cream cheese until melted, stirring until there are no lumps. Sprinkle in garlic powder, salt, pepper, and milk, stirring until smooth. Add pasta and mix until pasta is evenly coated. Serve!

I honestly thought it tasted better the next day after after the pasta had some time to “love on itself”. This is a perfect meal for Meatless Monday, or just a simple pasta night! It takes less than 30 minutes to make so it’s an easy after work meal to prepare!

I need my meat! lol I have tried a pasta dish without meat and it made me not even want to eat the pasta which is a good thing.
Sometimes I think we’re food twins. Creamy pasta, yes! I’m a huge carnivore too, but artichoke hearts make me happy.
I’m a fan of any recipe that calls for Philadelphia Cream Cheese! I must try this.

Mmmm. This sounds delicious! I love artichokes and pasta. Why, oh why did I never think to put them together?
I love adding spinach to pasta… such an easy way to give the meal a nutrition boost! I just made garbanzo bean pasta last night with marinara, and I added some sautéed spinach in for some greens. Also, love how you added in spices… They can make such a difference in the flavor of the dish!
