Dry rub chicken wings are a type of chicken wing that is coated in spices, herbs and other seasonings before cooking. The rub usually consists of salt, pepper, garlic powder, onion powder, paprika, cumin and brown sugar. The dry seasoning mix coats the wings and helps them to stay moist while cooking.

The flavor will be enhanced as the spice mix is cooked into the chicken, creating a flavorful and delicious dish. Dry rub chicken wings can be cooked in a variety of ways, such as baking, grilling or deep-frying. The wings are often served with ranch dressing or barbecue sauce to enhance their flavor even further.

Chicken Wings 3 Ways: Dry Rub, Buffalo & Caribbean Style

These delicious wings can be done 3 ways! Caribbean, Dry Rub and Buffalo. Offer a variety for your next event!

Ingredients

  • Righteous Dry Rub:
  • ● ½ Tbsp Ground Chipotle Chili Pepper
  • ● ½ Tbsp Smoked Paprika
  • ● ½ Tbsp Onion Powder
  • ● ½ Tbsp Coarse Salt
  • ● ¾ Tbsp Brown Sugar
  • ● ¾ tsp Chili Powder
  • ● ¾ tsp Cumin
  • ● ½ tsp Garlic Powder
  • ● ½ tsp Cayenne Pepper
  • ● ½ tsp Dried Mustard Powder
  • ● ¼ tsp Black Pepper
  • ● ¼ tsp Dried Oregano
  • ● ¼ tsp Dried Ground Thyme
  • 1. Combine all ingredients and rub on chicken, reserve some to toss in once wings are done
  • The Original Buffalo Wing Sauce:
  • ● 1 Stick of Butter
  • ● 1½ Tbsp Apple Cider Vinegar
  • ● 1/4 - 1 tsp Cayenne Pepper (To your heat level)
  • ● ⅛ tsp Garlic Powder
  • ● 1-2 tsp Cayenne Hot Sauce or Tabasco
  • ● ½ tsp Worcestershire
  • ● 4-8 Tbsp Franks Hot Sauce (or your favorite brand)
  • 1. Combine ingredients in a saucepan over low heat to melt butter, stir occasionally to blend well
  • Caribbean Jerk Sauce:
  • ● 2 Tbsp Butter, melted
  • ● 2 Tbsp Minced Spring Onions (wight and green parts)
  • ● 1 Cup Water
  • ● ¾ Cup Ketchup
  • ● ½ Cup + 2 Tbsp Brown Sugar
  • ● ¼ Cup Apple Cider Vinegar
  • ● 2 Tbsp White Vinegar
  • ● 2 Tbsp Cayenne Pepper Sauce
  • ● 2 tsp Ground Black Pepper
  • ● 2 tsp Worcestershire
  • ● 2 tsp Lime Juice (or lemon juice)
  • ● 1½ tsp Cayenne Pepper
  • ● 1 tsp dried Parsley
  • ● 1 Tbsp Cornstarch
  • ● ½ tsp Salt
  • ● ½ tsp Garlic Powder
  • ● ½ tsp Dried Thyme
  • ● ¼ tsp Onion Powder
  • ● ⅛ tsp Ground Clove
  • ● ⅛ tsp Ground Nutmeg
  • ● ⅛ tsp Ground Allspice
  • ● ⅛ tsp Ground Sage

Instructions

  1. Make a slurry with the cornstarch and 1/2 of the water, combine remaining ingredients in a saucepan and heat over medium heat. Bring to a slight boil and stir in the cornstarch slurry. Stir constantly until thickened up enough to coat the back of the spoon. 

Air fryer:

  1. Arrange wings in a single layer on an airfryer tray.
  2. Set the air fryer to 380° and cook the wings for 12 minutes. Remover and flip wings over and continue to cook for an additional 12 minutes. Increase the Temperature 400° and cook for 5 more minutes.
  3. Toss the wings in Sauces, or Righteous Rub

Oven:

  1. Preheat the Oven to 450°
  2. Line a baking sheet with foil, place a wire rack on top of the foiled tray.
  3. Toss wings in oil to coat, season with salt and pepper, or the righteous rub if using.
  4. Bake 25-30 minutes until crispy and cooked through, flipping halfway through cook time.
  5. Remove and toss in remaining Righteous Rub, Original Sauce, or Jerk Sauce.

Convection Oven:

  1. Preheat Convection oven to 425°
  2. Line a baking sheet with foil, place a wire rack on top of the foiled tray.
  3. Toss wings in oil to coat, season with salt and pepper, or the righteous rub if using.
  4. Cook the wings in the oven for 15 minutes
  5. Drop the Temp to 350° and cook for an additional 15-20 minutes until cooked through and crispy. May need to flip them over about half way through
  6. Remove and toss in remaining Righteous Rub, Original Sauce, or Jerk Sauce.
