Easy Copycat Taco Bell Enchrito Recipe

This Easy Copycat Taco Bell Enchrito Recipe is so good and easy to make for taco tuesday or anytime!

Ingredients

  • 1 pound ground beef
  • 1/4 cup all-purpose flour
  • 1 tablespoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon dried minced onion
  • 1/2 teaspoon paprika
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon garlic powder
  • 1/2 cup water
  • 1 - 16-ounce can refried beans
  • 10 to 12 small flour tortillas (fajita size)
  • ½ cup of onion, diced
  • 1 10-ounce can red enchilada sauce
  • 2 cups shredded Cheddar cheese

Instructions

  1. In a small bowl, combine the flour, chili powder, salt, minced onion, paprika, onion powder, and garlic powder. Set aside. 
  2. Add ground beef to a frying pan, breaking apart the meat as it cooks,  cook until ground beef is fully cooked and brown.  
  3. Drain ground beef and add the seasoning mix to the pan along with the water. Mix well with a spatula. Heat for 3 to 5 minutes, or until the seasoning mix and water have turned into a sauce.
  4. Microwave the refried beans for 2 minutes on high. 
  5. Warm the tortillas in the microwave for 1 minute on high. 
  6. Spoon about 3 tablespoons of refried beans down the center of each tortilla, then add about 3 tablespoons of beef on top of the beans. 
  7. Next add a small amount of minced onions.  Fold the sides of the tortilla over the meat mixture and roll into a burrito, seam side down. 
  8. Spoon about two tablespoons of enchilada sauce over the top of the tortilla, then sprinkle with the shredded cheddar cheese. Heat up the dish for 2 minutes in the microwave, until the cheese on top begins to melt. 
  9. Optional: Garnish with green onions and sour cream
