large eggs, room temperature
vegetable oil
water
finely chopped pecans

Filling:
softened cream cheese
softened butter
powdered sugar
milk
vanilla extract

This super fun carrot cake recipe is so good and perfect for Easter dessert or anytime!

Ingredients

  • Ingredients
  • 1 boxed carrot cake mix
  • 3-5 large eggs, room temperature
  • ½ cup vegetable oil
  • 1 cup water
  • 1 1/3 cups finely chopped pecans, divided
  • Cream Cheese Frosting:
  • 8 oz cream cheese, cold
  • 8 Tbsp (1/2 cup or 1 stick) butter, room temperature
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • Glaze:
  • 1-ounce softened cream cheese
  • 2/3 cup softened butter
  • 1 cup powdered sugar
  • 4 tablespoons milk, divided
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 350°. Line your pan with parchment paper and spray your pan with non-stick cooking spray
  2. Step 1: Add the water, oil, and eggs to the cake mix. Using an electric stand or hand mixture, beat until well combined. For an airier cake, first beat the eggs until frothy and then add to the cake mix along with the oil and water.
  3. Step 2: Spread HALF of the mixture into the prepared pan. Bake for 10-12 minutes and check for doneness by inserting a toothpick into the middle. If the toothpick comes out clean and the cake springs back when you touch it, it is done. If not, bake at 5-minute intervals until desired doneness is reached. Keep in the pan for 5 minutes.
  4. Step 3: Lay out a piece of parchment paper a bit longer than the size of the pan or your lay out the dishtowel. Gently flip the cake onto the parchment paper or towel.
  5. Step 4: Starting at one of the short ends, roll the cake WITH the parchment paper or towel. Allow to cool completely.
  6. Steps 5-6: While the cake is cooling, you can make your filling. In a mixing bowl, cream your butter and cream cheese until light and fluffy. Add in the vanilla extract, powdered sugar and 3 tablespoons of the milk. Beat until smooth. Reserve ¼ cup of the mixture.
  7. Step 7: Carefully unroll your cake. Spread the filling over the cake. Re-roll the cake, this time without the paper or towel. 
  8. Step 8: Add the remaining milk to the reserved filling and whisk until smooth. Drizzle over the cake and sprinkle the pecans. Serve and enjoy!
  9. Makes 2 cakes
