Easy Creamy Spinach Artichoke Penne Recipe

I’ve got a super easy recipe for you today! This awesome spinach artichoke penne pasta recipe is so good and flavorful!

I am a huge carnivore, I’m pretty sure I came out of my mother’s womb asking for a medium well prime rib! When I find alternate meatless meals, I get really excited!

I originally saw this recipe on the Tasty Facebook Page. That page is incredible and has a crazy following and for good reason–the recipes and the videos that accompany them makes it all seem so easy and so well…tasty!

I’ve tried a few of these recipes and they did not disappoint! This time I actually took step by step pics so that I could share it with you guys!

Grab a large skillet, cook the penne pasta in a large pot of water according to package directions till al dente over medium heat. This recipe reminds me of a spinach artichoke dip recipe I shared with you guys recently!

I bought the artichoke hearts from the freezer section and I used the best cream cheese in the world: Philadelphia Cream Cheese.

You can even add a little parmesan cheese or red pepper flakes as a fun topping to this pasta dish. This creamy spinach artichoke pasta is a great comfort food and the pasta cooks in just a couple of minutes.

It’s a great recipe for busy weeknights, the creamy sauce is such a treat for your taste buds. The chopped artichokes are so good in this recipe!

Creamy Spinach Artichoke Penne Pasta

olive oil
fresh spinach
chopped artichoke hearts, drained
cream cheese, softened
garlic powder
salt
pepper
milk
penne pasta

You won’t need any heavy cream, chicken stock, or provolone cheese for this perfect weeknight meal.

I honestly thought it tasted better the next day after after the pasta had some time to “love on itself”. This is a perfect meal for Meatless Monday, or just a simple pasta night!

Easy Creamy Spinach Artichoke Penne Recipe

This delicious creamy spinach artichoke penne recipe is so great! Great meatless pasta recipe that the family will love!

Ingredients

  • 2 Tbsp. olive oil
  • 5 oz spinach
  • 1 cup artichoke hearts, drained
  • 16 oz cream cheese, softened
  • 2 Tbsp. garlic powder
  • 2 tsp salt
  • 2 tsp pepper
  • 2 cups milk
  • 4 cups cooked penne

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add spinach, cooking until wilted, then add artichoke hearts, cooking for 1 minute.
  3. Next, add cream cheese until melted, stirring until there are no lumps.
  4. Sprinkle in garlic powder, salt, pepper, and milk, stirring until smooth.
  5. Add pasta and mix until pasta is evenly coated. Serve!

I love adding spinach to pasta... such an easy way to give the meal a nutrition boost! I just made garbanzo bean pasta last night with marinara, and I added some sautéed spinach in for some greens. Also, love how you added in spices... They can make such a difference in the flavor of the dish!
